i’m just rounding out week three of being sick. This is just not okay.  congestion, cough, restricted breathing, fevers – and i’m just so tired…i’m so over being sick!!! Atleast I can taste again though – those first 5 days were really rough!!

Tangerine Chicken

I don’t know how this happened, but it did, and it was soo good!!!  Sometimes Joe just gets inspired – and i’m so thankful for it!! Crunchy, chewy, sweet, spicy and warm. Definitely a recipe to keep (with some more changes of course). We didn’t have jalapenos, so that’s going to have to be added.  And it was spicy spicy spicy!! So maybe reduce the red pepper flakes by half when we add the jalapeno slices.  Oh – and some broccoli…i want some broccoli in there.  It was a bit labor intensive (not really labor, but there are a lot of steps and dishes involved – not exactly a quick cook/clean up meal, but amazing for having all of the ingredients in the kitchen). I wanna try to “tangerine” other meats. I’m thinking pork…then maybe made into a taco.  mmmmm…tangerine pork tacos.  my mouth’s watering!!

Italian Sausage Sammie

This sausage might just be too good to enjoy in a sandwich…but we did anyway – on some fresh rolls with a warm slaw.

*add more mustard to the slaw, and maybe a little vinegar to finish it off

Vodka/Tangerine Shrimp

Vodka/Tangerine shrimp with Orzo and Asparagus

Joe decided to try a new recipe last night.  Like many of the things we try, we look up a recipe, then follow about 10% of it :)   Ended up with shrimp (marinated in dry mustard, vodka, tangerines, garlic, cilantro, lime, garlic, and scallion – sauted with butter and heavy cream) with orzo and asparagus.

Parmesan Halibut

Parmesan Crusted Halibut and Asparagus with butter-cream sauce

Our first attempt at Parmesan Crusted Halibut.  The taste was good, but we need a better teflon pan to prepare something like this.  Maybe we should have used my super awesome crepe pan. Sadly, much of the crust stuck to the pan.  It was cooked perfectly, and the taste was awesome, but nothing beats those bites that held on to that crispy crusty goodness!!

Pizza!!!

Homemade Pizza attempt #2

This time we were way more successful – a 9 out of 10!!

Pizza with pepperoni, italian sausage and artichoke hearts

Naturally, the awesome meats were purchased at my favorite Italian deli (Roma’s). Artichokes were jarred/marinated, cheese was fresh and dough and sauce were homemade.

Notes:
*third the recipe for dough rather than half it
*slice the pepperoni a smidge thinner
*try removing the sausage from casing  and ball to pre-fry rather than slicing
*use plain artichoke hearts rather than marinated – vinegar/sour flavor was too strong or chop them up a bit so that each bite isn’t as overwhelming

Cactus Sopes

I had never had cactus before, so Joe decided to make some for me :) Fresh homemade blackbean and cactus sopes with jalapeno, monterey jack, and queso fresco. I have to say, i was a little scared i wasn’t gonna be into it.  I don’t generally like slimy foods. No squash or okra for me. but it was so good!! fresh, it had a texture that reminded me of a melon. Cooked, not nearly the slime factor I had anticipated. I have to put cactus on my list of tasty tasty treats!

Crabby Cakes and Loose Crab

We’ve been frequenting Restaurant Depot the last few weeks. (actually, every weekend the past 3 weekends!!) So, naturally, we got some crab to experiment with.

3/6/2010 – Crab Cakes with poached eggs, and hollandaise, on hawaiian rolls with bacon. I really can’t get over how great the creaminess is in a poached egg!
